2018 E11EVEN CABERNET SAUVIGNON
The Cabernet for this wine comes from 2 south-facing, hillside blocks at Great Oaks Vineyard. We have been working with this vineyard for well over two decades and think it is an ideal spot for growing world-class, distinctive Cabernet. We just love the gravelly, sun-drenched soils that turn out impossibly tiny Cabernet clusters with thick, dark skins. After picking in the cold of night, we gently sort, destem and partially crush the Cabernet into fermenters that allow us to pumpover the wine 2 times per day, which promotes softer and more gentle tannin extraction. After fermentation, we transfer the new wine to barrels for 20 months of barrel age in 30% new French oak. We the newly bottled wine in our cold cellars for an additional year before finally releasing. On the palate, you will taste mouthwatering ripe blackberry, fresh brewed coffee, warming cinnamon, cooling eucalyptus, black tea, and peppercorn-like spice. This wine is very age-worthy and will continue to show strongly over the next 7-10 years.
