2017 E11EVEN CABERNET SAUVIGNON
We source the grapes for our 2017 Cabernet Sauvignon from Great Oaks Vineyard, which lies within the eastern borders of the Santa Ynez Valley AVA. In 2017, a heat wave in late August and early September increased pace of harvest season. Then temperatures cooled later in September, slowed things down and allowed grapes to ripen gradually. This contributed to higher levels of concentration found in the finished wines from this vintage. We balance that full structure shown in our 2017 Cabernet Sauvignon by fermenting the grapes in tank and pumping them over twice a day. This promotes a softer, more gentle extraction of tannin. We also age for 20 months in 30% new French Oak as well as an additional 6-month aging in bottle before release. On the palate, you will taste mouthwatering ripe blackberry, fresh brewed coffee, warming cinnamon, cooling eucalyptus, black tea and peppercorn-like spice.
