2020 E11EVEN UNPLUGGED SAUVIGNON BLANC
I would argue that we are truly in a “goldilocks” climate for Sauvignon Blanc…cool enough to promote the bright acidity and tart citrus notes that we seek out each vintage, while also warm enough to achieve some of the tropical fruit aromas and flavors to round the wine. All winegrowing and winemaking is about balance and we think this wine showcases the balance of our terroir along with our efforts and decision-making in the cellar. In order to allow the varietal characteristics to shine through, we destemmed and crushed our Sauvignon Blanc grapes and left them on skins for 24 hours in our cold room. This extra maceration time (skin contact) allowed us to extract additional aromas, flavors and texture. The morning after harvest, we gently press the grapes off skins into a temperature controlled stainless steel tank that provides for a long, cool fermentation. Post fermentation, we age the wine in mix of stainless steel and neutral French Oak barrels. The 2020 “Unplugged” Sauvignon Blanc showcases mouth-watering notes of savory gooseberry, ripe passionfruit, pineapple dole whip, and aromatic lemongrass.
